Baked Black Bean Burger

This dish is incredibly filling, both in heart and in stomach. The soft bed of swiss chard is perfect for the ultimate veggie enthusiast, and topping it with a baked black bean burger makes this dish absolute perfection. (yields 4 patties)

What you'll need:

1 can black beans, washed (15 oz)

1/4 white onion, chopped

1/2 tbsp minced garlic

1 tbsp corn starch

1 tbsp warm water

2 tbsp hot sauce

1 tbsp Rocco's Spice

1/4 tsp salt

2 slices whole wheat bread, chopped into small pieces

1/2 C unbleached all-purpose flour

1 bunch of rainbow swiss chard, chopped

150 g orzo

1 tomato, chopped

Preheat your oven to 350°F (175°C) and lightly grease a baking sheet. In a large bowl, crush your beans, garlic and onion together (you can also pulse together in a food processor, but do not blend completely!). Whisk in the corn starch, water, hot sauce, spice, and salt. Once mixed, add the bread and flour and mix together. You're ready to shape your patties! Shape into 1/4 inch thick patties on your lightly greased baking tray. Bake until the outside is crisp. While the burgers are baking, boil water and wilt the swiss chard in the boiling water. When the swiss chard is 3/4 cooked, add the orzo. Drain the mixture and add your chopped tomato. Place your swiss chard-orzo-tomato mixture on a plate, and place your burger on top (or on the side, underneath, whichever you prefer)!
