Turmeric Tahini Roasted Cauliflower
  • 1 head cauliflower, cleaned
  • 1 tbsp parsley, chopped
  • 2 tbsp olive or sunflower oil
  • 1 tsp sweet paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tsp turmeric
  • 2 tbsp tahini
  • juice of 1 lemon

Preheat the oven to 400°F. Rub the cauliflower with oil, paprika, salt, and pepper, and place on a baking sheet (Line a baking sheet with foil for easy cleanup!) Bake uncovered for 20 minutes. After 20 minutes, or when the edges begin to brown, cover with foil and bake for an additional 15 minutes. While baking, make your tahini dressing. Whisk together the tahini, lemon juice, turmeric, and a pinch of salt and pepper, adding water is necessary, The tahini dressing should be smooth and pourable. Pull the cauliflower out of the oven and dress with tahini mixture. Buon appetito!
