Summer Avocado Pasta

A refreshing balance of flavors is a necessity during the sweltering summer months. This dish was inspired by Chef Joseph Fahey's delectable and bright avocado dressing. Serves 2.

What you'll need:

100g Gluten free rice spirals

1/2 C Italian pearled farro

1/2 heirloom tomato

For the sauce:
1 whole hass avocado

1 tsp salt

1 full palm of chopped cilantro

juice of 1 lime

1 tsp chipotle chili flakes

1/2 tsp Rocco's Spice

1 tbsp olive oil, cold-pressed

Preparation: 

Bring 1 C salted water to a boil in a small pot for the farro. In a large pot, bring 4 cups salted water to a boil for the pasta. While the water is boiling, combine avocado, oil, and salt until creamy. Add lime juice, cilantro and spices, and spices to the avocado mixture. Once the pasta and farro are both cooked, drain them and combine in the large pot. Add the tomatoes and avocado sauce, stir together, plate, and enjoy!
